Cranberry & Orange Bliss Bites
Ingredients
· 1 cup porridge oats
· 1/2 cup dried cranberries
· 1/2 cup almonds, finely chopped
· Zest of one orange
· 2 tablespoons honey or maple syrup
· 1/2 teaspoon vanilla extract
· 1/4 teaspoon cinnamon
· A pinch of salt
Instructions
· In a food blender, combine oats, dried cranberries, chopped almonds, orange zest, cinnamon, and a pinch of salt. Pulse until the mixture is well-combined and forms a coarse texture.
· Add honey or maple syrup and vanilla extract to the mixture. Continue to pulse until the ingredients come together into a sticky dough.
· Using your hands, roll the mixture into bite-sized balls. If the mixture is too dry, you can add a bit more honey or maple syrup.
· Place the bliss bites on a parchment-lined tray and refrigerate for at least 30 minutes to allow them to set.
Once set, these bliss bites are ready to serve! Store any leftovers in the refrigerator for a delightful, energy-boosting snack throughout the festive season.
